Our Story
From a little cart in a parking lot to a restaurant standing in that very same spot.
It started with a late night at Whiskey Row, a craving for real carne asada tacos, and one of those crazy ideas that somehow sticks. In 2017, that idea became a little taco cart in a Downtown Gilbert parking lot. Nights turned into weekends, the cart found its way around Downtown, and Midnight Taco became part of the late-night scene — fueled by two weekend warriors, husband and wife, a love for great street food, and a town we believed in.
The cart eventually led to our first restaurant, but the dream was always Downtown. Along the way, we brought with us the flavors that inspired us — from the taco stands and streets of San Luis Río Colorado, Sonora, to Nuevo Casas Grandes, Chihuahua, and Ensenada, Baja California. The food we grew up with, discovered, and fell in love with, now proudly served in the town our kids call home.
Nearly a decade later, Midnight Taco has come full circle — back where the late nights, the cart, and the whole crazy idea began. Only this time, we're here with the brick-and-mortar we always dreamed of opening in the heart of Downtown Gilbert.
